Ingredients (Serves 4)
4 cod fillets (5–6 oz each), patted very dry
Salt and black pepper, to taste
2 tbsp olive oil
4 tbsp unsalted butter
3 garlic cloves, finely minced
1 tbsp fresh parsley, finely chopped
1 tsp fresh thyme leaves
1 tsp fresh dill, finely chopped
1 tbsp fresh lemon juice
Instruções
Prepare the cod
Pat the cod fillets very dry with paper towels. Season both sides lightly with salt and black pepper. Dry fish is key for a golden crust.
Sear until golden
Heat the olive oil in a wide skillet over medium heat. Add the cod fillets and cook for 3 to 4 minutes without moving them, until a deep golden crust forms. Turn gently and cook another 2 to 3 minutes, just until the fish flakes easily. Transfer to a warm plate.
Build the herb butter
Lower the heat. Add the butter to the same skillet. Once melted, stir in the garlic and cook for about 30 seconds, just until fragrant, not browned.
Finish the sauce
Stir in the parsley, thyme, dill, and lemon juice. Let the sauce warm gently for 30 to 60 seconds so the flavors bloom and stay fresh.
Serve calmly
Return the cod to the skillet briefly or spoon the herb butter generously over the fish on plates. Let the butter pool naturally around each piece.
Serve warm with quiet conversation, perhaps alongside simple potatoes or steamed vegetables. This is the kind of meal that feels steady, comforting, and made with care.
