Spicy Coconut Beef Bowls

Ingredientes

1 cup uncooked rice (or quinoa)

2 cups water or broth

1 tablespoon oil

1 lb ground beef

1 red pepper, diced

1 small yellow onion, diced

2 garlic cloves, minced

2 tablespoons soy sauce

1 tablespoon rice vinegar

2 tablespoons honey

1 tablespoon chili crisp (less if sensitive to spice)

1/2 teaspoon ginger powder

1/4 cup beef broth

Broth:

1 (15oz) can coconut milk

1 tablespoon soy sauce

1 tablespoon chili crisp

1/2 teaspoon ginger powder

1-2 tsp red curry paste (optional)

Diced cucumber, for garnish

Chili crisp, for garnish (optional)

Instruções

Cook rice according to package directions, adjusting portion sizes as needed.

Meanwhile, heat a skillet over medium-high heat. Drizzle with oil, then add the ground beef, breaking it into small pieces as it browns. Once the beef is almost fully cooked, add the pepper, onion and garlic and sauté until softened.

Mix together the soy sauce, honey, rice vinegar, chili crisp, ginger powder and broth then add to the beef mixture, stirring to combine. Reduce the heat and allow the sauce to slightly cook down. If needed, season with salt.

For the broth, add coconut milk, soy sauce, chili crisp and ginger to a sauce pan. Bring to a boil and stir to combine all ingredients.

Assemble bowls by adding rice, then topping with beef, broth, cucumbers.

Jen’s note: I added a bit of red Thai curry paste to the coconut broth mix!
