grown-up broccoli cheese rice

Ingredientes

1 tbsp olive oil

1/2 yellow onion (diced)

1 tsp garlic (minced)

1 cup vegetable broth (or chicken)

3 cups broccoli (cut into bite sized pieces)

2 cups orzo (cooked)

1 15 oz can white beans (optional)

1 cup parmesan cheese (grated)

1/2 block of cream cheese (optional)

2 tbsp lemon juice

salt and pepper (to taste)

olive oil, parmesan, lemon zest (for topping)

When not using beans I top with freezer meatballs(heated) at the end!

Instruções

Cook orzo and prep frozen brocolli if using.

Add the olive oil to a large pan over medium heat. Add diced onion and cook for 2-3 minutes, until mostly cooked through. Add garlic and cook 1 additional minute.

Add vegetable broth and broccoli. Cover the pan with a lid and let simmer for 4-5 minutes, until the broccoli is tender and most of the broth is reduced.

Add cooked orzo, white beans, and cream cheese (if using) and stir until combined. If there is still more liquid than you prefer, continue to cook for a couple minutes until the consistency is how you want it.

Add parmesan cheese and stir to combine. Divide the mixture onto plates and top with a drizzle of olive oil, lemon zest, and some extra parmesan. Enjoy!
