This is the one to make when you want to impress people without the stress.

Fresh herbs, creamy cashew feta and golden flaky filo, twisted into a beautiful spiral and baked until crispy.

It looks like a showstopper. It’s secretly straightforward.

For the filling

1 onion

1 leek

Juice of 1 lemon

15g fresh mint

15g fresh dill

30g fresh parsley

1 tsp sumac

1 tsp dried mint

300g spinach

For the cashew feta

150g cashews, soaked

100ml plant-based milk

Juice of 1 lemon

2 tbsp nutritional yeast

250g plant-based feta

40g plant-based parmesan

For the pastry

75g plant-based butter

6 sheets plant-based filo

1 tbsp sesame seeds

Instruções

Preheat oven to 170°C.

How to make it

Soften the onion and leek in a pan until tender. Add the spinach and wilt down. Drain well, then stir through the fresh herbs, dried mint, sumac and lemon juice.

Blend the soaked cashews with the plant milk, lemon juice and nutritional yeast until smooth. Add the feta and pulse to combine.

Brush each filo sheet with melted butter and layer with the filling. Roll into a long log, then coil into a spiral in a round baking dish. Brush with more butter and scatter over the sesame seeds.

Bake for 40 minutes until golden and crispy. Serve with lemon wedges.
