Chicken & Veggie Stir-Fry with Brown Rice

1 cup uncooked brown rice
300g boneless chicken breast, cubed
1 shallot, finely chopped
1 medium carrot, sliced
1 small zucchini, sliced
½ red bell pepper, sliced
1 cup broccoli florets (fresh or frozen)
2 tbsp low-sodium soy sauce or coconut aminos
1 tbsp olive oil
Instruções
Cook rice according to package instructions (~25 min).
Sauté shallots in oil, then add chicken and cook until browned.
Add vegetables and stir-fry until tender.
Add soy sauce and cook for 2 more minutes.
Cool and portion into plates
