Chicken Pesto Tortellini

513 g thin sliced chicken breast
567 g (20oz) 5 Cheese tortellini
120 g (≈ ½ cup) Buitoni basil pesto sauce (pine nuts & walnuts)
245 g (1 cup) Great Value plain nonfat Greek yogurt
60 g fresh spinach
80 g baby bella mushrooms
30 g sun-dried tomatoes (dry, rehydrated)
25 g grated Parmesan cheese
1 tsp Italian seasoning
½ tsp garlic salt
¼ tsp black pepper
Instruções
Cook tortellini according to package. Reserve ½ cup pasta water.
Season chicken with salt, pepper, garlic powder.
Sauté in a large skillet until just cooked; remove and slice.
In the same pan, sauté mushrooms until golden.
Lower heat. Stir in:
Greek yogurt
Pesto
Splash of pasta water to thin
Add tortellini, chicken, sun-dried tomatoes, and spinach.
Toss until spinach wilts.
Finish with Parmesan and extra pasta water as needed.
