Cheesy Carrot & Courgette Orzo

1 carrot finely grated
2 garlic cloves minced
1 small courgette finely grated
1 tablespoon olive oil or butter
450ml low salt chicken stock
40g grated cheddar cheese
190g dried orzo
Instruções
Start by heating your oil or butter over a medium-high heat. Add your garlic, carrot and courgette and fry off for 2-3 minutes until soft and fragrant.
Add your orzo to the pan along with your chicken stock. Stir and bring to a boil. Once boiling turn down to a medium heat and cook for 10 minutes, stirring occasionally.
Once your orzo is soft, remove from the heat, stir through your cheese, plate up and enjoy!
