Sheet Pan Chicken Shawarma

For the Chicken:
2 lbs boneless, skinless chicken thighs, cut into strips or chunks
½ Tbsp olive oil
3 Tbsp plain Greek yogurt
2 Tbsp tomato paste
Juice of 1 large lemon
8 garlic cloves, minced
1 Tbsp dried thyme or oregano
1 Tbsp sweet paprika
⅓ tsp ground cinnamon
1 tsp ground cumin
Salt and black pepper, to taste
For Roasting:
2 medium red onions, cut into wedges
1–2 Tbsp olive oil (for drizzling)
½ Tbsp ground sumac
For Serving:
Chopped parsley
Tzatziki sauce
Extra sumac, for dusting
Fresh lemon juice
Instruções
Preheat the oven to 400F. Line a baking sheet with parchment paper.
Place chicken in a large bowl. Add olive oil, Greek yogurt, tomato paste, lemon juice, garlic, thyme, paprika, cinnamon, cumin, salt, and pepper. Mix until evenly coated.
Arrange chicken pieces on the prepared baking sheet, leaving space between each piece. Scatter red onion wedges around the chicken. Drizzle with additional olive oil and sprinkle with sumac.
Bake for about 40 mins, or until chicken is cooked through and slightly charred at the edges.
Top with fresh herbs, diced cucumber, extra sumac, and a squeeze of lemon juice. Serve warm.
