Picnic-Perfect Chicken Cutlet Baguettes

Ingrediënten

1/2 small red onion, thinly sliced

1 tbsp. red wine vinegar

Kosher salt and pepper

1 lb. boneless, skinless chicken breasts

1 tbsp. olive oil

6 c. baby spinach

4 5-in. pieces baguette, split and toasted

Instructies

Toss onion with vinegar and 1/8 tsp each salt and pepper; let sit.

Cut chicken into 6 thin cutlets. Heat oil in large skillet on medium-high. Season chicken with 1/2 tsp each salt and pepper and cook until browned and cooked through, 2 min. per side; transfer to cutting board.

Add spinach to skillet, season with salt and pepper and cook until just beginning to wilt.

Slice chicken and sandwich between baguette halves with spinach and onions.
