For the meatballs
1 lb ground chicken
½ cup breadcrumbs
¼ cup grated Parmesan
1 large egg
2 cloves garlic, minced
½ tsp salt
½ tsp black pepper
½ tsp Italian seasoning
1 tbsp olive oil (for browning)
For the creamy spinach sauce
2 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth
½ cup grated Parmesan
2 cups fresh spinach
¼ tsp nutmeg (optional but great)
Salt & pepper, to taste

Make the meatballs:
In a bowl, mix ground chicken, breadcrumbs, Parmesan, egg, garlic, salt, pepper, and Italian seasoning. Roll into golf-ball–size meatballs.
Brown the meatballs:
Heat olive oil in a large skillet over medium heat. Sear meatballs on all sides until golden (they don’t need to be fully cooked). Remove and set aside.
Start the sauce:
In the same skillet, melt butter. Add garlic and sauté 30 seconds until fragrant.
Add liquids:
Pour in chicken broth and heavy cream. Simmer 3–4 minutes until slightly thickened.
Finish the sauce:
Stir in Parmesan, nutmeg (if using), salt, and pepper. Add spinach and let it wilt.
Return meatballs:
Nestle meatballs back into the sauce. Cover and simmer 8–10 minutes until cooked through and the sauce is silky.
Serving Suggestions
Serve over pasta, mashed potatoes, or rice
Spoon over toasted sourdough or garlic bread
Add red pepper flakes for heat
