4 sweet potato’s
Drizzle olive oil
Pinch of salt
For the Chilli
500g minced beef
1 red onion, diced
1 red capsicum, diced
Seasoning: I used @mingleseasoning chilli con carne but you can make up your own!
1 tsp garlic paste
1 tbsp tomato paste
1 tin of crushed tomato’s
1 beef stock cube
1/4 cup of water
1 tin black beans, drained and rinsed
1/2 cup grated cheddar cheese
Optional Toppings

Stab sweet potato’s with a fork and lightly rub in olive oil. Bake at 180c for 70-90 minutes or until soft and caramelised.
When potatos have 30 minutes left, start making your chilli. Add diced onion and capsicum to pan on medium high heat with some olive oil. Cook for 3-5 min until soft.
Add beef mince to brown, breaking up with a spoon.
Add your seasoning, tomato paste, garlic and cook off for a few mins.
Pour tinned tomatos, water, stock cube and black beans, reduce heat to a gentle simmer. Stirring occasionally.
Once potato’s are baked, transfer them to a baking dish and cut them open with a knife.
Top potatos with chilli con carne, then sprinkle over cheese.
Bake 180c fan for 10-15 minutes or until cheese has melted and bubbling.
Serve with a side salad and extra toppings! Enjoy
