These blondies are super soft and chewy! Theyโ€™re packed with white chocolate chips, and have a subtle butterscotch flavour ๐Ÿคค

Blondies are actually really quick and easy to make, but a lot of people make these two mistakes that means they donโ€™t bake or set properly

All you need is:

170g unsalted butter, softened

165g light brown sugar

100g granulated sugar

1 large egg + 1 egg yolk, room temp

2 tsp vanilla extract

215g plain flour

1/2 tsp salt

150g-200g white chocolate chips (any flavour is fine)

Tin size: 8.5 x 8.5 inches (8 or 9 inches is fine, if you use an 8โ€ tin it may need slightly longer in the oven, please donโ€™t use anything smaller without reducing the measurements proportionally)

Bake 180C/(160C fan oven) 20 mins ๐Ÿฅฐ Please remember all ovens are different and cooking times are a guide. The material of your tin/dish will also make a difference to how your blondies cook. When the top is crisp and golden brown and it no longer wobbles, itโ€™s ready ๐Ÿ™Œ

Let it cool fully in the tin to allow it to set properly. You can also put them in the fridge for a few hours to make them really fudgy ๐ŸคŒ
