Best Soft and Chewy Blondies

These blondies are super soft and chewy! Theyโre packed with white chocolate chips, and have a subtle butterscotch flavour ๐คค
Blondies are actually really quick and easy to make, but a lot of people make these two mistakes that means they donโt bake or set properly

All you need is:
170g unsalted butter, softened
165g light brown sugar
100g granulated sugar
1 large egg + 1 egg yolk, room temp
2 tsp vanilla extract
215g plain flour
1/2 tsp salt
150g-200g white chocolate chips (any flavour is fine)
Tin size: 8.5 x 8.5 inches (8 or 9 inches is fine, if you use an 8โ tin it may need slightly longer in the oven, please donโt use anything smaller without reducing the measurements proportionally)

Bake 180C/(160C fan oven) 20 mins ๐ฅฐ Please remember all ovens are different and cooking times are a guide. The material of your tin/dish will also make a difference to how your blondies cook. When the top is crisp and golden brown and it no longer wobbles, itโs ready ๐
Let it cool fully in the tin to allow it to set properly. You can also put them in the fridge for a few hours to make them really fudgy ๐ค
