Loaded Sweet Potato Egg Bake

Ingredients: Serving size is 2 pieces

754g sweet potato

8 whole eggs (Seasonings: 1/2 tsp salt, pepper, garlic, smoked paprika)

1 cup cottage cheese

1 jalapeño

1/4 an onion

1 bell pepper

3 slices turkey bacon

Handful of spinach

56g fat free mozzarella

14g fresh grated parm

In a baking pan mash down your boiled potatoes (bottom thinner & push the potato up the side walls to form that crust). Oil & season, then bake @ 400° for 20 mins to let it set & crisp a bit.

Next, in a blender add your eggs, cottage cheese, seasonings listed above, and blend.

Pour egg mix in the potato crust & add your jalapeño, onion, bell pepper, turkey bacon, spinach, and whatever else you like. Then top with your cheeses and bake at that same 400° for 30-40 mins. Cut into 9 squares, the macros are for 2 squares
