Chicken Roasted with Potatoes, Prunes and Pomegranate Molass

Chicken Maryland (legs and thighs as one piece) - 8
Medium sized potatoes, peeled - 16 ~about 800g net
Large onions, peeled and quartered - 3
Pitted prunes - 120g
Ginger, finely minced - 30g
Lemon juice - 30ml
Preserved lemon slices - 5g
Soy sauce - 100ml
Pomegranate molasses - 90g
Honey - 1tbsp
Sweet mango chutney - 120g
Whole black peppercorns - 0.5 tsp
Oregano leaves - 20g (this is a fair amount)

1 Heat the oven to 220C.
2 Mix all the ingredients in a bowl, then tip into two casserole dishes.
3 Cover with a lid (or thick foil), and bake for 10 minutes.
4 Lower the heat to 190C, and cook for two hours longer, stirring every now and then.
5 When finished, remove the dish from the oven, stir once more, cover and set aside for at least 15 minutes, to rest and allow the flavours to mingle.
6 When served into a serving container, pour any remaining sauce over the chicken.
