1 gallon milk

3/4 cup distilled white vinegar

In a large pot, bring the 1 gallon of milk to a temperature of 190° very slowly.

Remove from heat once it hits 190° and add the vinegar gently stirring.

Place a lid on the pot and let it sit for 30 minutes.

Place a cheese cloth in a colander and strain the milk. Let’s sit for 20 to 30 minutes.

Squeeze all excess moisture out of the cottage cheese through the cheese cloth.

Place the ball of cottage cheese into a bowl of cold water, rinsing gently by hand.

Place a clean cheese cloth in the colander and strain cheese again, removing as much moisture as you can by squeezing.

Salt to taste.

노트

If you prefer a creamier cottage cheese, add 1/4 cup of milk and 2 tbsp heavy cream.
