Hot Honey Chicken Bowls

For the chicken:
2lbs Boneless Skinless Chicken Breast, cubed
Garlic Powder, Paprika, Chili Powder, Salt
2tbsp Olive Oil
2tbsp Honey
1/4 Cup Hot Sauce
For the cilantro lime rice:
2 Cups Jasmine Rice
Juice & Zest of 1 Lime
Salt
1/3 Cup Chopped Cilantro
For the corn salsa:
1 12oz Bag Frozen Corn
1/2 Medium Red Onion, diced
2 Jalapeños, diced
1/4 Cup Chopped Cilantro
Juice of 1 Lime
Salt
Other toppings:
1 can of black beans

For the Chicken: cube your chicken. Drizzle with olive oil and season generously with the chili powder, paprika & garlic powder. Add salt. Warm a medium sized pan over medium heat. Add the chicken & lower heat to medium-low. Cook the chicken throughly. Add the hot sauce & honey and allow it to bubble for 1-2 minutes! Set the chicken aside.
For the Cilantro Lime Rice: cook your jasmine rice. mix in the cilantro, lime zest and juice, and pinch of salt.
For the corn salsa: Heat a small pan over medium heat. Pour in the corn & season with salt. Blister both sides of the corn. Mix the corn with the diced jalapeño, red onion, cilantro and lime juice.
Build your bowls! Add 200g rice, 4.5oz of chicken, 1/4 cup of corn salsa & 2tbsp of black beans into your container. Cover & refrigerate!
