Pizza Dough

1 1/2 tsp active dry yeast

1 1/2 tsp salt

2 1/4 cups cold water

5 Cups all-purpose flour

1 tbsp olive oil

Preheat the oven as high as it will go for at least 45 minutes to 1 hour (if using a pizza stone, this is my preferred method).

Mix flour, salt, and yeast in a stand mixer or bowl. Slowly add cold water.

Knead for 8-10 minutes in a stand mixer fitted with the dough hook or by hand. The dough should be smooth and slightly sticky, but not sticking to the sides of the bowl.

Cut into six large pieces and form into balls. Put your olive oil on a baking sheet and coat evenly. Place the dough balls in the olive oil and roll around to coat them lightly

Cover and let them sit to rise for 2 hours.

Roll out the balls and place them on parchment paper. Make your pizza as usual.

Place the parchment-lined pizza on a preheated baking sheet or pizza stone and bake for 5-7 minutes, until cooked through and bubbly.

If you would like a dough that rises quicker, use warm water instead of cold.

Combine the yeast and water, and let it sit for 5 minutes to become bubbly before adding it to the other ingredients. This will activate the yeast more quickly, and it should only need to rise for about 30-45 minutes.

This dough freezes beautifully. After it has risen, wrap the dough ball in parchment paper and place it in a freezer safe container. When ready, thaw and use as usual.
