Miso Tahini Dressing

6 Tbsp tahini
2 Tbsp red miso paste
1 Tbsp honey
2 inch knob grated fresh ginger (few Tbsp)
Juice of 1 small lemon
¼ cup filtered water

Add all ingredients to a high-speed blender or food processor, or whisk by hand.
Blend until completely smooth and creamy, scraping down the sides as needed. Taste and adjust consistency with a splash of water, if desired.
Store in an airtight container in the fridge for up to a week. Shake or stir before using.
노트
Rachel: The original recipe had one more Tbsp tahini and 1 tsp soy sauce, but I thought it was too bitter and salty so I altered and added the honey. Still bitter but yummy on roasted veggies.
