Peanut Butter Cup Cottage Cheese Balls (High Protein, Low Ca

1/2 cup cottage cheese

1/4 cup natural peanut butter (or powdered peanut butter with water for lower fat)

2 tbsp maple syrup or honey (adjust to taste)

1/2 tsp vanilla extract

1/2 cup almond flour (or oat flour)

1/2 cup chocolate chips

1 tsp coconut oil

Add cottage cheese, honey, peanut butter, vanilla to the blender and blend until smooth.

Add to a bowl and mix with almond flour. (Or use a food processor and add all ingredients and blend until smooth.)

Scoop out balls and place on a parchment paper lined tray or plate.

Set in the freezer to chill for at least 10-15min.

After chilling, roll into balls.

Make chocolate shell by combining chocolate chips and coconut oil, microwave for 30sec., stir, and repeat until smooth.

Dip each ball into melted chocolate and place back on the tray/plate. Top with flakey sea salt.

Set in the freezer for at least 30min. Enjoy!
