- 200g flour
- 2 eggs (medium)
- 2 pinches of salt
- 220ml cold water

- Add flour, egg and salt into a bowl
- Slowly pour water in and incorporate everything with a wooden spoon until batter forms
- batter should flow off the spoon but be viscous (like honey) - if too thick add water, if too thin add flour to get consistency right
- rest in fridge for 12 min (with cover)
- boil a pot of water, once rolling boil add salt
- use the spätzleria - add dough to top and scrape into the water (more dough probably better)
- Spätzle will be ready really soon (they'll float)

If making more than 2 portions work in batches and take Spätzle out in between
