Taco meat

  • 2 lbs ground beef

  • 1 medium onion, chopped

  • 2 cloves garlic, chopped

  • 3 oz beef liver pâté or pureed liver

  • 2 teaspoons sea salt

  • 1 tablespoon mild chili powder

  • 1 teaspoon dried oregano

  • ½ teaspoon cumin

  • 3 green onions, chopped (½ set aside for garnish)

  • 14–16 oz jar mild tomato salsa

Salad and toppings

  • 2 heads romaine lettuce, shredded or chopped

  • 1 can black beans, drained

  • 1 cup sour cream

  • 1 cup grated Monterey Jack cheese

  • 2 bell peppers (red, yellow, or orange), diced

  • 2 tomatoes, diced

  • 1–2 large avocados, diced

  • 1–2 fresh limes, cut into wedges

  • Organic corn or plantain chips (optional)

Directions

1. Preheat a large skillet over medium-high heat. Brown ground beef with onions until meat is cooked through and onions are translucent (do not drain the fat!). Add garlic and then liver pâté (or puree), salt, and all dried herbs and spices. Simmer for 2–3 minutes.

2. Add green onions and salsa and simmer for about 10 minutes, or until tomato juices have thickened slightly. Remove from heat and set aside.

3. To serve, prepare individual bowls of romaine lettuce and top with taco meat and any (or all) of the available toppings. Lisa’s spice blend: Leave out the chili powder, oregano, and cumin when seasoning the taco meat. In its place, add 1 teaspoon each of curry powder, dried thyme, and dried basil. Also add ¼ teaspoon ground cloves and the juice of ½ a lemon.

For many people, taco salad is pretty self-explanatory, but there are many different interpretations out there! Our version is particularly nutrient-dense and optimal for fertility because of the “hidden” liver in the taco meat blend. We’ve kept the proportion of liver to ground beef on the low side to ensure a mild flavor, but you can add more if you’d like. As far as herbs and spices go, we’ve mimicked the flavor of commercial taco seasoning packets (without the chemical additives or MSG!).
