Ground Beef Tacos

Ingredients

1ย Tablespoonย avocado oil

1ย poundย lean ground beef

1ย mediumย green bell pepperย (finely diced)

1ย cupย beef brothย (or stock)

8ย smallย corn or whole wheat tortillas

2ย cupsย shredded lettuce

1/2ย cupย diced onion

1/2ย cupย diced tomato

1/2ย cupย shredded cheddar cheese

1ย mediumย limeย (cut into 4 wedges)

Ground Beef Seasoning

1ย Tablespoonย masa flour

1ย teaspoonย chili powder

1ย teaspoonย garlic powder

2ย teaspoonsย paprika

1ย teaspoonย cumin

1ย teaspoonย dried minced onion

1ย teaspoonย salt

1/2ย teaspoonย sugarย (optional)

In a small bowl, combine the seasoning ingredients and whisk well. Set the seasoning mix aside.

Heat a large skillet over medium-high heat and add the oil.

Add the ground beef and green bell pepper to the skillet breaking it up as it cooks.

Once the ground beef is cooked and browned, sprinkle over the entire seasoning mixture and stir it into the ground beef and green pepper.

Add the beef broth to the meat and stir well again.

Reduce the heat to medium-low and allow the beef to simmer, stirring occasionally, until the liquid is absorbed.

Warm the tortillas in a dry, hot skillet for a few seconds on each side and then fill with ground beef, lettuce, tomato, onions, and a squeeze of lime.

Add additional toppings as you wish, serve, and enjoy!
