For the Chicken:

4 bone-in chicken thighs, skin-on

2 tablespoons olive oil

2 cups mushrooms, sliced

For the Mashed Potatoes:

4 large potatoes, peeled and cubed

STEP 1: PREPARE THE MASHED POTATOES

Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain well and mash until smooth. Stir in butter and warm milk, mixing until creamy and silky. Season with salt and keep warm.

STEP 2: COOK THE CHICKEN

Pat the chicken thighs dry and season generously with salt, pepper, paprika, and thyme. Heat olive oil in a skillet over medium-high heat. Place the chicken skin-side down and sear until deeply golden and crispy, about 6-7 minutes. Flip and cook the other side until fully cooked through. Remove and set aside.

STEP 3: MAKE THE MUSHROOM SAUCE

In the same pan, melt butter and add the sliced mushrooms. Cook until golden and slightly caramelized. Stir in garlic and sauté briefly until fragrant. Pour in chicken broth and let it reduce slightly. Add the cream and Dijon mustard, stirring until the sauce becomes rich and velvety. Season to taste.

STEP 4: COMBINE AND SERVE

Return the chicken to the pan, spooning the sauce over the top. Let it simmer gently for a few minutes to absorb flavors. Serve over a bed of creamy mashed potatoes and finish with fresh parsley.
