This is a vegan GF version of my old FAVE- Tamagoyaki, aka Japanese omelet rolls🥢 I made this with organic split mung beans plus some superfood watercress from @bwqualitygrowers 🌱

Watercress is sooo underrated! It’s the ONLY vegetable that received a perfect nutrient density score by the CDC and was ranked number on the powder house veggie & fruit list 💪🏼 its unique peppery taste and crunch adds such a nice lift to so many dishes including this Tamagoyaki 😋 I got mine from @bwqualitygrowers who has been specializing in growing super greens for over 150 years 🌟

1 cup split mung bean, soaked overnight

1 small carrot

1 cup watercress @bwqualitygrower

1 fat shallot

1 1/2 tbsp tapioca flour

1 tsp Kala namak, aka black salt

1/2 tsp garlic powder

1/2 tsp turmeric

1 cup soy milk
