1. Classic Soy-Sesame Sauce
2 tbsp soy sauce
1 tsp sesame oil
1 tsp rice vinegar or lime juice
1/2 tsp honey or maple syrup
Optional: grated ginger or garlic, sesame seeds
2. Spicy Mayo
2 tbsp mayo
1โ2 tsp sriracha (to taste)
A few drops of lime juice or sesame oil

Rice:
Rinse rice under water a few times. Cook 2 cups of rice in rice cooker. Let sit for 10 mins.
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. You can warm it slightly (microwave or small pot) to help dissolve. Lay rice on a sheet, mix in vinegar sauce.
