Greek Cucumber Yogurt Dip

6 Persian or mini cucumbers (about 1 pound)

Salt

2 cups plain Greek yogurt

1 tablespoon olive oil

5 tablespoons freshly squeezed lemon juice

3 garlic cloves, minced

2 tablespoons finely chopped fresh dill, plus extra for garnish

2 tablespoons finely chopped fresh mint, plus extra for garnish

1 teaspoon sumac, plus extra for garnish

1 teaspoon white vinegar

1. Using a box grater or a mandoline, finely grate the cucumbers or slice them into short, thin pieces. Sprinkle with salt and place in a strainer lined with cheesecloth or a thick paper towel.

2. Let the cucumbers sit for 30 minutes, then squeeze the cloth or paper towel to extract as much moisture as possible. Discard excess moisture.

3. In a mixing bowl, combine the strained cucumbers, yogurt, ½ tablespoon of the olive oil, lemon juice, garlic, dill, mint, sumac, and vinegar. Add salt and pepper to taste.

4. Mix all the ingredients together and place in a serving bowl. Garnish with more dill, mint, sumac, and the remaining ½ tablespoon of olive oil.

5. Serve chilled. Keeps well in the fridge for 2 to 3 days.
