Potato Tacos with Chorizo

12 oz chorizo
8-10 Yukon Gold potatoes
1 cup shredded melting cheese / mozzarella
black pepper to taste

- Boil potatoes to cook 
- Break up chorizo in a skillet until crumbled and cooked (about 12 to 15 minutes) 
- Add cooked potatoes to chorizo, mash and mix to combine 
- Season with salt and pepper 
- Add melting cheese 
- Microwave tortillas in damp paper towel for 45 seconds 
- Place the filling in the tortillas, fold in half 
- Place tacos on greased/sprayed baking sheet 
- Bake at 400 degrees for 10-15 minutes
