2 tablespoons olive oil
2 pounds boneless chicken breasts, chopped into bite-sized pieces
1 garlic clove, crushed
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/3 cup apple juice
1/3 cup light brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 cup water
1/3 cup soy sauce

Heat olive oil in a large skillet over medium heat. Add the chicken and cook both sides until lightly browned. Remove and set aside.
To the same skillet, add the garlic, ginger, red pepper flakes, apple juice, brown sugar, ketchup, apple cider vinegar, water, and soy sauce. Cook over medium heat, stirring constantly, until dissolved.
Add the chicken and bring the mixture to a boil. Reduce the heat to low and let the dish simmer for 20 minutes, or until the chicken is cooked and the sauce has thickened. Serve over rice. Enjoy!
