Easiest Honey Mustard Smashed Potatoes

honey mustard smashed potatoes:

1 ½ -2 lbs baby potatoes

2 tbsp olive oil

1/4 cup mixed parsley and cilantro, chopped

1/2 tsp salt

1/2 tsp black pepper

Honey Mustard Sauce

2 tbsp mayonnaise

2 tbsp dijon mustard

1 tbsp honey

1/4 tsp apple cider vinegar

1/8 tsp paprika

Salt & pepper

Preheat the oven to 400 F

Bring a large pot of salted water to a boil and boil the potatoes for about 15-20 minutes, until they’re fork tender. Drain out the water and add the potatoes to a sheet pan

In a small bowl, combine the olive oil, herbs and salt & pepper. Pour over the boiled potatoes and toss together to coat them evenly

Smash each potato down with the bottom of a mug/thick glass cup

Bake the potatoes for 25 minutes. Flip and bake for an additional 15-20 minutes

Prepare the honey mustard sauce by whisking together the mayo, mustard, honey, apple cider vinegar and spices until smooth. Serve as a dip with the roasted potatoes
