High-protein Apple Chicken Salad

A sweet-savory chicken salad that’s crunchy, creamy, and packed with protein. Perfect for summer gatherings or easy weekday lunches.

Ingredients (Salad):

2 cups cooked chicken (rotisserie preferred), diced

1/2 cup sliced almonds

1/3 cup dried cranberries

1 cup Honeycrisp apple, finely diced

1/3 cup green onions, thinly sliced

Dressing:

1/3 cup mayo

3 tbsp sour cream (light works great)

1 1/2 tbsp honey

1 1/2 tbsp apple cider vinegar

1 1/2 tsp Dijon mustard

1/4 tsp salt

1/8 tsp black pepper

Whisk all dressing ingredients together in a small bowl until smooth.

Add chicken, almonds, cranberries, apples, and green onions to a large bowl.

Pour dressing over the salad and toss until evenly coated.

Taste and adjust seasoning as needed.

Serve immediately or chill for later.

Great on its own, in lettuce cups, or stuffed into a sandwich 🥪✨
