Soup Slow Cooker

1 lb chicken breasts or thighs
4 cups low-sodium chicken broth
2 cups diced potatoes
1 cup chopped carrots
½ cup celery
½ cup onion
2 cloves garlic
1 tsp thyme
1 tsp parsley
½ tsp smoked paprika
salt and pepper to taste
optional: ½ cup white beans

Add everything to a slow cooker and cook 6–7 hours on low or 3–4 hours on high.
Shred the chicken and return it to the pot. Stir and serve.
This is the kind of meal that keeps you full, satisfied, and far away from the 9pm snack attack.
