Soft & Chewy Raspberry Sugar Cookies

Cookie Dough

1 cup (2 sticks) unsalted butter, softened

1 ½ cups granulated sugar

1 large egg

2 tsp vanilla extract

2 ½ cups all-purpose flour

¾ tsp baking soda

½ tsp salt

Filling + Finish

½ cup raspberry preserves or jam

Extra sugar for rolling

As they bake, the air fills with warm vanilla and buttery sugar — pure bliss.

Preheat oven to 350°F (175°C) and line baking sheets.

Cream butter and sugar until light and fluffy.

Mix in egg and vanilla until fully combined.

In a separate bowl, whisk flour, baking soda, and salt.

Gradually add dry mix to wet, stirring until dough forms.

Scoop dough into 1-inch balls and roll in granulated sugar.

Place on sheet, spacing 2 inches apart.

Press a thumbprint or spoon dent into each ball.

Fill each with ½ tsp raspberry jam.

Bake for 10–12 minutes until edges are set. Cool before devouring.
