2 lbs ground beef (80/20 blend)
1 cup breadcrumbs
1/2 cup whole milk
2 large eggs
1 yellow onion, finely chopped
3 cloves garlic, minced
1 1/2 cups chopped mushrooms
2 tbsp fresh parsley, chopped
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
1/2 tsp smoked paprika
1/2 tsp dried thyme
2 tbsp olive oil (for sautéing)
3 tbsp unsalted butter
3 tbsp all-purpose flour
2 cups beef broth
1/2 cup heavy cream
1/2 tsp salt, to taste (for gravy)
1/4 tsp black pepper, to taste (for gravy)
2 tbsp chopped parsley, for garnish

Step 1
Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.

In a skillet, heat olive oil and sauté chopped onion, garlic, and mushrooms for 5–7 minutes until softened and fragrant.

In a large bowl, mix ground beef, milk-soaked breadcrumbs, eggs, sautéed vegetables, parsley, Dijon, Worcestershire, and spices until just combined.
Step 4
Shape mixture into loaf in the prepared pan. Bake for 55–65 minutes or until internal temperature reaches 160°F (71°C). Let rest 10 minutes before slicing.
Step 5
In the same skillet, melt butter and sauté sliced mushrooms until golden. Add garlic and cook 1 more minute.
Step 6
Sprinkle in flour and stir to form a roux. Slowly whisk in beef broth, then heavy cream. Simmer until thickened. Season to taste.
Step 7
Slice rested meatloaf and spoon warm mushroom gravy over each serving. Garnish with chopped parsley and serve hot.
