Roasted Veggie Sheet Pan Mix ๐ฅ๐
Sweet, salty, crunchy - one cozy pan with melty feta on top.
Youโll Need (serves 4):
โข 2 cups Brussels sprouts, halved
โข 2 cups butternut squash cubes (or peeled pumpkin)
โข 2 cups sweet potato cubes
โข 1 1/2 cups beet chunks (fresh, peeled)
โข 3 tbsp olive oil
โข 1 tbsp maple syrup
โข 1 tbsp balsamic vinegar
โข 1 tsp Dijon mustard
โข 1 tsp garlic powder
โข 1 tsp dried parsley (plus a pinch for top)
โข 3/4 tsp salt
โข 1/2 tsp black pepper
โข 1/2 cup dried cranberries
โข 1/2 cup walnut halves
โข 1/2 cup crumbled feta
Optional: Topping / Side
โข Extra feta crumbles
โข Warm dinner rolls on the side

1. Heat oven to 400ยฐF. Line a sheet pan.
2. In a big bowl, toss Brussels sprouts, squash, sweet potato, and beets with olive oil, maple syrup, balsamic, Dijon, garlic powder, parsley, salt, and pepper.
3. Spread veggies out in one layer. Roast 25โ30 minutes. Toss once halfway.
4. Sprinkle cranberries on the pan for the last 5 minutes so they get soft and warm.
5. Pull pan out. Top with feta and walnuts.
6. Sprinkle a little more parsley and serve warm.
Tip:
Crowded pan? Use two pans so the veggies get browned, not steamed.
