Cajun Parmesan Chicken Wraps

๏ปฟ1/4 cup + 1 tbsp (70 mL) 0% skim milk
๏ปฟ3 tbsp (50 g) nonfat Greek yogurt
๏ปฟ1/4 cup + 1 tbsp (50-60 g) grated Parmesan cheese
๏ปฟ1 tbsp (8 g) sun-dried tomatoes, finely chopped
๏ปฟ1 tbsp (5 g) fresh spinach, finely chopped
๏ปฟ1/2 tsp: salt, ground black pepper, smoked paprika, garlic powder
Cajun Parm Chicken (p. 79 in "Fit Flavours" cookbook):
9 oz chicken breast, sliced into fillets
1 tbsp Homemade Cajun Seasoning (p. 21 in "Fit Flavours" cookbook)
๏ปฟ2 tbsp (15 g) grated Parmesan cheese
To Assemble:
๏ปฟ3 low carb tortillas
๏ปฟ3 tbsp Light "Marry Me" Sauce, divided
90 g low fat shredded mozzarella, divided
๏ปฟ25 g fresh spinach, divided

๏ปฟ๏ปฟMake the "Marry Me" sauce over medium heat on a nonstick pan; stir milk, yogurt, cheese and seasonings together until thickened (~4-6 minutes). Set aside. To the same pan, season and cook chicken breast over medium heat for ~4 minutes on each side. While that's going, chop spinach, shred cheese, and cut each tortilla about half the diameter across.
๏ปฟ๏ปฟAssemble folded wraps: cream sauce (whole tortilla), chicken (first quarter), cheese (next two quarters), spinach (final quarter). Fold over itself.

3. Place seam-side down over medium heat for ~2-3 minutes to seal, then flip and brown the other side for ~2-3 minutes. Enjoy!
