One Pan Creamy Lemon Garlic Chicken Gnocchi

time: just 30 minutes from start to finish to faceplant, thanks to store-bought gnocchi and some simple ingredients you may already have on hand. the chicken takes a quick crisp in a pan and gets paired with spinach in a peppery lemon-garlic sauce for a balanced meal that requires minimal clean-up.

CREAMY LEMON-GARLIC CHICKEN & GNOCCHI

16 oz chicken breasts, cut in half lengthwise to make cutlets โ€ข 3/4tsp garlic powder โ€ข 1 tsp lemon pepper seasoning 2 tbsp olive oil or butter โ€ข 3 cloves garlic, minced โ€ข ยฝ cup chicken or vegetable broth โ€ข

1 tbsp lemon juice โ€ข 1 cup heavy cream or plant-based cream โ€ข 1 lb. potato gnocchi โ€ข 1/3 cup parmesan cheese, grated โ€ข 3 cups fresh spinach โ€ข

season each of side of the thin chicken cutlets with garlic powder and lemon pepper

add oil and butter to skillet over medium-high heat; add garlic and saute 2-3 mins. place chicken in the pan and sear 5 min per side, until golden and cooked through. transfer to a plate.

stir in broth and lemon juice.

add cream and gnocchi. Stir and make sure the gnocchi is covered in sauce. let it simmer uncovered, for 5-7 minutes, stirring occasionally until sauce is thickened.

remove pan from heat and add parmesan and spinach. toss until spinach is wilted. place chicken cutlets back into skillet
