Quinoa Salad

2 cups quinoa

1 can chickpeas

1 red onion, diced

2 cucumbers, diced into quarters

1 cup pistachios, chopped

1/2 cup feta cheese

Fresh Parsley, chopped

Fresh mint, chopped

1 cup olive oil

2 lemons, juiced

6 garlic cloves, minced

1 1/2 tsp salt

1/2 tsp pepper

Cook your quinoa according to package.

Make your dressing by combining olive oil, lemon juice, garlic, salt and pepper. Whisk well.

To a large bowl add a little dressing to the bottom then add in your quinoa, layer toppings, pour remaining dressing and toss well.
