Slow Cooked Beef Brisket Madras

600g Beef brisket
100g Madras spice paste
400g chopped tomatoes
400ml coconut milk
1 beef stock pot
1 tbsp garlic and ginger paste

season the brisket while you heat a little oil in a large frying pan over a medium heat. Sear the brisket on all sides
Transfer to the slow cooker with all the other ingredients and add 200ml of boiling water. Cook on high for 4h or low for 8h until the beef is soft.
Shred the meat using two forks in the pot, then return the beef to the slow cooker and stir to coat the meat
Serve with hot rice or potatoes
