Caesar Salad

1 head romaine lettuce, washed and dried

1 clove garlic, pressed or finely chopped

1 2-ounce can anchovy fillets, drained and mashed

¼ teaspoon salt, or to taste

½ teaspoon freshly ground black pepper, or to taste

½ cup olive oil (high quality first cold pressed)

1 teaspoon Dijon mustard

3 tablespoons freshly squeezed lemon juice

1 fresh egg

¼ cup freshly grated Parmesan cheese

Extra shaved Parmesan if desired

1 cup toasted croutons

1. Wash and dry lettuce, break into small pieces, and set aside or chill until

ready to use.

2. In wooden salad bowl, place garlic and anchovies. Add salt and pepper

and mash together.

3. Add oil, mustard, and lemon juice and stir to combine.

4. Add crisp romaine lettuce pieces and toss with dressing.

5. Carefully lower an egg (in shell) into boiling water, allow to sit for one

minute, and crack over salad; toss until lettuce is well coated.

6. Sprinkle with Parmesan cheese and croutons, toss again, and serve

immediately with additional freshly cracked pepper.

노트

Dressing can be made up ahead by putting all the ingredients in a ball mason

jar, shake well and refrigerate until ready to toss the salad.
