Summertime French bread pizzas

2 baguettes

80g fresh basil pesto

2 ripe tomatoes, sliced

8 slices of salami, tom

200g Mozzarella, grated

1 tsp dried oregano

To serve:

Green salad

Coleslaw

1 Preheat the oven to 200°C/180°C fan/gas mark 6. Use a bread knife to split the baguettes in half lengthwise. Place cut side-up on a large baking tray and spread with the pesto.

2 Layer over half of the tomatoes and the salami. Sprinkle with half of the Mozzarella. Top with the remaining tomatoes, the remaining Mozzarella and the oregano.

3 Bake for 8-10 minutes until the bread is heated through and the cheese is melted. Slice each baguette half in two and serve with a green salad and some coleslaw.
