1½ teaspoons dried Mexican oregano

2½ pounds boneless pork butt, cut into 2 inch cubes

½ medium onion

2 bay leaves

2 cinnamon sticks

1 teaspoon whole black peppersorns

3 whole cloves

1 red onion, quartered and sliced into 1-inch-wide strips

1 habanero chile, stemmed, seeded, deveined, and finely chopped

½ eup freshly squeezed lime juice (from 5 limes)

¼ eup red vite negat

Unless you want to dig a barbecue pit in your backyard, using a slow cooker for this Yucatán-style roasted pork is the best way to achieve the tenderest meat.
