Grilled Cheese

For the Roasted Garlic Butter Spread:
3 head of garlic
1 tbsp olive oil
1 stick of butter, softened
1/4 cup shredded parm
1/4 cup shredded cheddar cheese
1 tbsp chopped basil
1 tbsp italian seasoning
For the Cream Cheese Spread:
4 oz cream cheese, softened
2 tbsp sour cream
ยฝ tsp red pepper flakes (adjust to taste)
1 tsp Italian seasoning
ยฝ tsp garlic powder
ยฝ tsp onion powder
Salt and pepper, to taste
For the Sandwich:
4 slices sourdough or italian bread
4 slices provolone cheese
4 slices cheddar cheese
ยฝ cup shredded mozzarella cheese

Roast the Garlic:
Preheat oven to 400ยฐF (200ยฐC). Slice the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 35โ40 minutes, until golden and soft. Let cool.
Make the Butter:
In a bowl, mash roasted garlic with all ingredients listed above and set aside.
Make the cream cheese spread:Mix together 4 oz cream cheese, 2 tbsp sour cream, ยฝ tsp red pepper flakes, 1 tsp Italian seasoning, ยฝ tsp garlic powder, ยฝ tsp onion powder, Salt and pepper, to taste
Assemble the Sandwiches:
Spread the garlic butter mixture generously on one side of each bread slice. On the unspread side, layer provolone, cheddar, a dollop of cream cheese mixture and a generous sprinkle of shredded mozzarella. Close up the sandwiches.
Grill:
Grill in a skillet over medium heat until golden brown and crisp on both sides, and the cheese is gloriously melted.
Serve:
Slice in half and serve hot. Maybe with tomato soup or a spicy marinara for dipping hehe
