Creamy French Onion Tortellini {One-Pot}

1 b (450g) cheese tortellini pasta
1 tablespoon unsalted butter
1 large onion, finely minced
1 cup vegetable broth
3/4 cup heavy whipping cream
1/2 cup grated parmesan
Sprigs of fresh thyme
1/2 teaspoon black pepper
1/2 teaspoon red chili pepper flakes, optional

1. To make the creamy French onion tortellini pasta: Melt butter in a large pan, preferably cast iron. Cook onion on medium-low for 10 – 15 minutes, stirring occasionally, until caramelized. You can put a lid on for the first 5 minutes so the onion cooks and caramelize a little quicker without drying up.
2. Add tortellini pasta to the onion, and pour the vegetable broth. This will deglaze the brown onion bit stuck to the pan. Add the thyme sprigs, stir quickly, then cook on low until pasta is al dente.
3. When tortellini is just al dente, pour the heavy whipping cream and sprinkle parmesan. Continue cooking, stirring regularly, until the cheese is melted and the sauce is creamy. Add a little vegetable broth if you need it. Season with black pepper and red chili pepper flakes.
4. Serve the creamy French onion tortellini pasta immediately, with more thyme and parmesan if you like. Enjoy! ❤️
