Apple Sausage Butternut Squash Recipe Below

Apple Sausage Butternut Squash:

1 medium sized Butternut Squash

1 pound Italian Sausage

1 Yellow Onion, diced

4 Garlic cloves, minced

3 cups Baby Spinach

1 Apple, diced

2 tbsp fresh Sage, finely chopped

1 tbsp fresh Rosemary, finely chopped

1/4 cup dried Cranberries

1/2 cup Pecans, chopped

Salt and Pepper to taste

Preheat oven to 375°F. Slice squash in half lengthwise. Scoop the seeds out of the squash and place cut side down on baking dish. Pour about 1 1/2 cups of water into dish around the squash halves. Bake for 45 minutes or until tender and easily pierced with fork.

Add sausage to a pan on medium heat, cook until browned. Then add in onions, garlic and baby spinach. Stir and cook for 3 minutes, until spinach is wilted.

Add the sage, rosemary and apple. Cook for another 3 minutes.

Cut the heat and add in cranberries and pecans.

When the squash halves are cooked, remove from oven (may need to drain water) flip over and remove some of the insides (Keep insides for another day).

Fill squash with the apple, sausage mixture. Place back in oven and bake for 5 minutes or until golden on top.
