Milk Gravy

4 tablespoons butter

4 tablespoons (1/4 cup) flour or rice flour, generous, not leveled

1 teaspoon salt

1/4 teaspoon pepper

3 cups milk

Melt butter in pan. Add the flour, salt, and pepper and whisk into the butter until bubbly and smooth, about 2 minutes. Whisk in milk gradually, whisking continuously. Bring to a simmer (vigorous) for 4-5 minutes, continuing to whisk often. Adjust salt to taste and add more milk if needed for thinner gravy. Season with other seasonings if desired.

This makes about 2 cups gravy.
