Cottage Cheese Banana Bread Mug Cake

½ ripe banana, mashed

1 egg

1 tbsp almond flour (or oat flour for a softer texture)

½ tsp vanilla extract

¼ tsp cinnamon

½ tsp baking powder

Pinch of salt

Optional: 1 tsp maple syrup or honey (for added sweetness), chopped walnuts or chocolate chips

Step 1: Mix the Batter

In a mug or small bowl, mash the banana with a fork.

Add cottage cheese, egg, vanilla, cinnamon, and sweetener (if using). Stir well.

Mix in almond flour, baking powder, and salt until fully combined.

Fold in optional mix-ins like nuts or chocolate chips.

Step 2: Microwave

Microwave on high for 1½ to 2 minutes, or until the top is set and springy.

Let it cool for a minute before digging in.

Optional Oven Method:

Pour batter into a greased ramekin and bake at 350°F (175°C) for 15–18 minutes.

Tips:

For extra banana flavor, add a few slices on top before cooking.

Make it dessert-like with a drizzle of nut butter or a few dark chocolate chunks.

Easily double the recipe to make 2 servings or use a large ramekin.
