Baker's Original German Sweet Chocolate Cake

FOR THE CAKE BATTER:
1 (4 ounce) package baker's German sweet chocolate
1/2 cup boiling water
1 cup butter
2 cups sugar 400 gm
4 eggs, separated by yolks and whites
1 teaspoon vanilla
2 cups cake flour. 240 gm
1 teaspoon baking soda
1/2 teaspoon salt. 3 gm
1 cup buttermilk or sour milk (See Notes). 227 gm
FOR THE FROSTING:
1 1/2 cups evaporated milk
1 1/2 cups sugar. 300 gm
4 slightly beaten egg yolks
3/4 cup butter
1 1/2 teaspoons vanilla
2 cups shredded coconut. 170 gm
1 1/2 cups chopped pecans. 170 gm

Coconut-Pecan frosting (recipe follows).
Oven at 350ºF.
Melt chocolate in water, cool.
Cream butter and sugar.
Beat in egg yolks.
Stir in vanilla and chocolate.
Mix flour, soda, and salt.
Beat in flour mixture, alternately with buttermilk.
Beat egg whites until stiff peaks form; fold into batter.
Pour batter into two 9-inch layer pans, lined on bottoms with waxed or parchment paper.
Bake for 30 minutes or until cake springs bake when lightly pressed in center.
Cool for at least 15 minutes!!! remove and cool on rack.
Frost cake.
COCONUT-PECAN FROSTING:
Combine evaporated milk, sugar, slightly beaten egg yolks, butter, and vanilla in saucepan.
Cook and stir over medium heat until thickened. Remove from heat. (Usually takes 12 minutes)
Stir in shredded coconut and chopped pecans.
Beat until frosting is cool thick enough to spread.
Makes 4-1/4 cups.
노트
This recipe is the one my Mom used to make. It is a favorite of mine. Moist, flavorful, and the frosting is sinfully good.
To make sour milk, add one tablespoon of lemon juice or vinegar to one cup of milk and let it sit for 5 minutes until it curdles
