Chicken Chopped Salad

  • 500g chicken thigh

  • 2 tbsp olive oil

  • 1 lime, juiced

  • 1 tsp chilli powder

  • 1 tsp smoked paprika

  • 1 tsp ground cumin

  • ½ tsp garlic powder

  • 100g plain greek yoghurt

  • 1 lime, juiced

  • 2 tsp hot sauce of choice

  • 2 tsp maple syrup or honey

  • 1 garlic, minced

  • 2 romaine lettuce, chopped

  • bag of salad

  • 4 green onions, sliced

  • handful curly parsley, chopped

  • 1 red pepper, diced

  • 1 red onion, sliced

  • 1 jalapeno, seeded and diced

  • sweetcorn, eyeball

  • 200g Lentils (ready to eat)

  • sundried toms to top

  • pine nuts or others to top

  • Paramsean slices to top

  1. Marinate chicken in spices while chopping other ingredients or overnight

  2. grill chicken untill cooked or airfry until 74c reached

  3. add all the salad ingredients together with the chopped chicken to a large salad bowl. Add the dressing and toss to combine and top with toppings
