Summer Lobster Rolls

Ingredienti

9 ounces fresh steamed lobster meat (from two 1 1/2-pound live lobsters), chopped

1 medium (4 ounces) Haas avocado, chopped

Juice of 1 large lemon

1 teaspoon olive oil

2 teaspoons minced fresh chives

Kosher salt and freshly ground black pepper

4 whole wheat hot dog buns

1 cup shredded lettuce

Istruzioni

In a medium bowl combine the lobster meat, avocado, lemon juice, olive oil, and chives, and season with a pinch of salt and black pepper

Open the hot dog buns and put the shredded lettuce inside.

Top with the lobster salad and serve.
