Herb Butter Chicken With Potato And Green Bean

2 large chicken breasts

1.5 lb baby potatoes, halved if large

12 oz green beans, trimmed

3 tbsp olive oil, divided

1½ tsp paprika

1 tsp garlic powder

1 tsp onion powder

1 tsp dried oregano

1 tsp dried thyme

1½ tsp salt

1 tsp black pepper

4 tbsp butter, melted

3 garlic cloves, minced

2 tbsp fresh parsley, chopped

Extra parsley for garnish

1 tbsp lemon juice

½ tsp red pepper flakes (optional)

¼ cup chicken broth

Istruzioni

Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.

In a small bowl, combine paprika, garlic powder, onion powder, oregano, thyme, salt, and black pepper.

Toss potatoes with 1 tablespoon olive oil and half of the seasoning mixture. Spread on the baking sheet and roast for 20 minutes.

Rub chicken breasts with 1 tablespoon olive oil and remaining seasoning.

In another bowl, mix melted butter, minced garlic, parsley, lemon juice, red pepper flakes, and chicken broth.

Remove potatoes from the oven, place chicken on the pan, and add green beans around the sides. Drizzle herb butter mixture evenly over everything.

Return to oven and bake for 20–25 minutes until chicken reaches 165°F (74°C) internally and potatoes are tender.

Garnish with fresh parsley and serve warm.
